Breakfast on a local island starts the day the Maldives has eaten for centuries: mas huni, smoked tuna shredded by hand with grated coconut, onion, chilli and lime, scooped up in warm roshi flatbread with sweet black tea. It's spare, bright and quietly addictive — the whole country in a single plate.
Everything here comes from the reef and the palm. Skipjack tuna, landed by line from wooden dhoni boats, is the backbone; coconut in every form is the rest. The islanders' comfort is garudhiya, a clear tuna broth spooned over rice with lime, chilli and a curl of raw onion — nothing to hide behind, and all the better for it. Come the afternoon, tea shops fill with hedhikaa, the moreish short eats — crisp fish gulha, spiced bajiya — that vanish faster than you can order them. Skip the resort buffet once and eat where the boats come in.
