Switzerland
A nation that turns milk into an art form — melted, matured, and best eaten at altitude.
Come in from the cold to a wood-panelled mountain hut, order the fondue, and let the ritual take over: a communal pot of Gruyère and Vacherin melted with white wine and a whisper of kirsch, a basket of bread cubes, and the unspoken rule that whoever drops theirs buys the next round. This is food built for altitude and company — rich, slow and unbothered by the clock.
Switzerland does more with milk than seems reasonable. There's raclette, a half-wheel melted at the fire and scraped over potatoes and pickles; älplermagronen, the herdsman's pasta with potato, cheese and a spoon of apple sauce; crisp golden rösti under a fried egg. Cross an invisible line and the accent changes — French in the west, German in the centre, Italian in the south — but two things hold everywhere: air-dried Bündnerfleisch sliced tissue-thin, and a bar of chocolate so good it rewrote the rules.
