One appellation, 34,000 hectares, and a landscape UNESCO lists for the hillsides, houses and cellars together. Reims and Épernay sit on chalk that Roman quarrying left hollow, and the great houses — Pommery, Taittinger, Moët, Ruinart — mature their bottles in those crayères, kilometres of them, at a constant 10 °C. Reims Cathedral crowned thirty-three French kings and still has the Chagall windows in the axial chapel. Épernay's Avenue de Champagne is said to be the most valuable street in the world, because of what is underneath it rather than on it.
